Proxmox Server Solutions GmbH provides only software for users to install and manage on their own hardware.
The Proxmox VE Mobile Companion app is then used only as an interface for these instances.
Therefore, full control over accounts, including their deletion, on Proxmox VE instances rests with the instance administrator and is outside the control of Proxmox Server Solutions GmbH.
Thus, for any account deletion, you must contact the administrator of the instance to which you are connecting.

The Proxmox VE Mobile Companion app saves data only locally on your device, namely previously Proxmox VE server's you logged in with the username and cached ticket (valid for two hours since last renewal). You can clear that info by deleting the local data via the app menu in the Android settings, like with any other local data of apps.

No data will be sent to Proxmox Server Solutions GmbH or any third party from the app directly.
