I've found that recreating the UEFI partition and fill accordingly like
that does not suffices, the VM does not boot in uefi mode.

Instead of fiddling too much with things i dont't know very well, i've
chrooted into the VM, installed grub-pc and now the VM run happily, but
in BIOS mode.
