since proxmox can not create those lun's on the fly i would use use 
individual lun's

with lvm on top of iscsi you have to choose between shared storage or 
thin provision. and you do not get snapshots.

you can use a cluster filsystem on the iscsi, and use disk image files.

But you can also use zfs over iscsi and that should be shared, have 
snapshots and thin provision. so that is what i would have researched 
first. i have not used it myself so no first hand experience.
