[PVE-User] How to get rid of default thin-provisioned default LV "data"?

This should be a case of removing (or comment out) its corresponding entry
in /etc/pve/storage.cfg and then removing it by using the usual lvm
commands.
You can then "convert" it to thick lvm and re-add it in the config file...
